These moreishly delicious miniature extra mature cheddar souflettes were developed from the concept of an elevated Cheese Beignet.
In developing the souflette recipe, the NPD Chefs’ challenge was to ensure consistent oven rise, tempting colour, and a light fluffy texture, while using a dense product like cheese. They invested time looking at luxury cheeses to ensure they had the perfect combination. Multiple trials lead to a perfect final recipe to share with our Retail stake holders.
The product required specialist packaging to not only ooze luxury at an acceptable price point, but also allowing product to rise evenly during the cooking process; the team worked very closely with packaging suppliers to achieve this.
The product was presented to one of our significant Retail customers, which they instantly loved. It was launched in 2017 for the Christmas Party Food campaign.
We manufactured well over one million units in the weeks preceding the campaign.
The product was such a great success, we further developed products for the Christmas Party Food range to include three Christmas Bauble range flavours: beetroot and goats cheese, pesto and mascarpone, and a vintage cheddar selection.
Further success was achieved with the Extra Mature Cheddar Souflettes in the Party Food Range for both Retail and Food Service.
The original 2017 recipe returns for the 2022 Christmas Party Food range in a delicious new collaboration with a key Brand Cheddar. The bite-size extra mature cheese souflettes are as moreish as ever before, or perhaps even more so!
